So here it is, the second offering in my Indian feast triptych of delights. I'll confess, this is probably my very favourite of all three, purely just because I am a spinach ADDICT! I love the stuff, I eat it in salads, I drink it in smoothies and sometimes, I just eat handfuls of it on its own. I especially love it when it's wilted and mixed with potato, cauliflower and spices. YEAH MAN!!! In true award ceremony style, I have to thank my awesome friend Esharan for the inspiration for this recipe, because when a friend gives you a vegan recipe passed on by her Indian mother who is an incredible cook- YOU JUST MAKE IT OK?!?!?!!!! I am so excited about this one. This one changes EVERYTHING!! Ok, that might be a little bit of an exaggeration, but still, I was well happy about it!
So the star of the day is....... cauliflower! I've always like cauliflower since childhood, when my Nan used to serve us raw cauliflower with dip before meals. I've also LOVED sushi since the first ever taste. So this.....this is a lovechild of the two. The idea started when I was trying to make a cauliflower crust pizza. It failed. I'm still in the process of trying to find a gluten free vegan pizza. I shall not be defeated. Anyway, I digress, part of the process is to is bung a cauliflower into a food processor and chop the living hell out of it. It was at this point that I thought the cauliflower had a very similar texture to rice, and would probably make much nicer sushi than pizza crust. I was right, however that night I hadn't listened to my heart. I went with the pizza and (because it was a failure) ended up eating sliced mushrooms and carrots for dinner. Not my best attempt to change the perception of vegans just eating carrot sticks eh? Well, this should change all that. This is a taste sensation!!!
